Beautiful Beets

Passage’s mad photography skills have provided us with this beautiful example of some of the beets we grew.  Pictured above are striped Chioggia beets (grown from starts) and Golden Beets (grown from seeds).  They are the first of the season, and we hope to have many more to follow.  These were boiled to perfection and enjoyed while writing this post.

    If you are interested, I will send the Co-op’s (Extremely Simple) Recipe for pickled beets…in my opinion ~ to die for!! :)

    :) Salad Beets :)

    5 or 6 (or you decide how many) medium beets
    2 parts Golden Balsamic vinegar (no other is anywhere as yummy)
    1 part olive oil
    pinch of salt
    ~1-2 Tbl. minced walnuts

    Mix together the vinegar, olive oil, nuts, salt. Wash beets, cut off tops and tails. Steam until tender, 20-30 minutes. Let cool 15 minutes, then peel and slice (1/4″). Add to dressing, toss to cover and let stand at least 1 hour before serving. Keeps 3-4 days in fridge, cover. Let come to room temp. before serving. Try to be kind enough to share :))
